Brown Sugar Glazed Carrots

Glazed carrots are simple enough that there is nowhere for bad texture to hide. Simmer them until barely tender, then reduce the butter-and-brown-sugar coating until shiny rather than soupy. The orange side dish has earned its place at a roast dinner.

Ingredients
  

  • 2 lbs carrots peeled and cut into 1/2-inch coins
  • 1 cup water
  • 3 tbsp unsalted butter
  • 3 tbsp brown sugar
  • 1/2 tsp kosher salt
  • 1 tbsp fresh lemon juice
  • 1/8 tsp ground cinnamon

Method
 

  1. Combine the carrots, water and salt in a wide skillet and bring to a simmer over medium-high heat.
  2. Cover and cook for 8 minutes until the carrots are barely tender when pierced with a fork.
  3. Uncover and cook until the remaining water has nearly evaporated.
  4. Add the butter, brown sugar and cinnamon and cook for 4 to 5 minutes, tossing often, until the glaze looks shiny and clings to the carrots.
  5. Remove the skillet from the heat and stir in the lemon juice before serving.
