Broccoli Cheddar Stuffed Chicken

Finely chopped broccoli and sharp cheddar fill chicken breasts with a compact, savory center. Blanching and drying the broccoli prevents a watery pocket, while cream cheese holds the filling together. Secure the opening and check the meat beside the cheese, not the molten center itself.

Ingredients
  

  • 4 boneless skinless chicken breasts 7 ounces each
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 cup finely chopped broccoli blanched and dried
  • 1 cup shredded sharp cheddar
  • 3 ounces cream cheese softened
  • 1/2 teaspoon garlic powder
  • 1 tablespoon olive oil

Method
 

  1. Heat the oven to 400°F. Cut a pocket into each breast and season inside and out with salt and pepper.
  2. Mix broccoli, cheddar, cream cheese and garlic powder and stuff the pockets. Secure with toothpicks.
  3. Brown chicken in oil in an oven-safe skillet for 2 minutes per side, then transfer to the oven.
  4. Bake 18 to 24 minutes until the thickest chicken reaches 165°F. Rest 5 minutes and remove toothpicks.
