Boston Market-Inspired Creamy Rotini Mac

Tight rotini spirals and a mild cheddar-American sauce distinguish this Boston Market-inspired side. The sauce is smoother and paler than a baked sharp-cheddar casserole, with enough body to cling inside every curve. Gentle heat and processed cheese keep it stable during a short covered warm hold.

Ingredients
  

  • 1 lb rotini
  • 3 tbsp unsalted butter
  • 3 tbsp all-purpose flour
  • 1 can 12 oz evaporated milk
  • 1 1/2 cups whole milk
  • 10 oz mild cheddar freshly shredded
  • 6 oz American cheese chopped
  • 1 tsp kosher salt
  • 1/4 tsp white pepper

Method
 

  1. Boil the rotini until just tender, reserve 1 cup pasta water and drain.
  2. Melt butter over medium-low heat, whisk in flour for 1 minute and gradually add both milks.
  3. Simmer gently for 3 minutes until the sauce lightly coats a spoon.
  4. Remove from the heat and melt in cheddar, American cheese, salt and white pepper a handful at a time.
  5. Fold in rotini and add reserved pasta water until glossy and flowing.
