Blended Mocha Frappe-Style Drink

Xanthan gum is optional but explains the café texture: a tiny pinch keeps ice crystals and coffee from separating before the drink is finished. Freeze coffee into cubes so the mocha stays strong. Scratch mocha sauce supplies cocoa and sugar in one smooth ingredient, while milk keeps the blend spoonable but not icy.

Ingredients
  

  • 1 cup frozen strong-coffee cubes
  • 1/2 cup cold milk
  • 3 tbsp scratch mocha sauce from recipe 5
  • 1 tbsp granulated sugar optional
  • 1/16 tsp xanthan gum optional
  • Whipped cream optional

Method
 

  1. Add frozen coffee cubes, milk, mocha sauce, sugar and xanthan gum to a blender.
  2. Blend low for 10 seconds, then high until smooth and thick, stopping once to scrape the sides.
  3. Add 1 tablespoon milk only if the blades cannot turn freely.
  4. Pour into a tall glass and add whipped cream if desired; serve immediately.
