Ingredients
  

  • 4 cups firm vanilla ice cream
  • 1/3 cup whole milk
  • 2 small prepared vanilla cupcakes frosting removed and divided
  • 1 tsp vanilla extract
  • 1/3 cup vanilla frosting
  • 1/3 cup rainbow sprinkles
  • 1 cup whipped cream
  • 2 small prepared mini vanilla cupcakes with frosting

Method
 

  1. Spread the vanilla frosting around the outer rims of two large chilled glasses and press the rainbow sprinkles into the frosting.
  2. Add the milk, vanilla, ice cream and the cake portions of the 2 unfrosted cupcakes to a blender.
  3. Pulse 6 times and blend for 18 seconds until spoon-thick with fine cake crumbs.
  4. Pour into the prepared glasses and top each with 1/2 cup whipped cream.
  5. Set one mini frosted cupcake securely on each whipped-cream top and serve with a spoon immediately.
