Benihana-Style Garlic Butter Fried Rice

Cold rice is nonnegotiable here; warm rice steams and smears instead of frying. Work on a broad hot surface and add the garlic butter near the end so it stays fragrant. Break every clump before the soy sauce goes in.

Ingredients
  

  • 4 cups cold cooked long-grain rice
  • 2 tbsp neutral oil
  • 2 large eggs beaten
  • 1 cup diced yellow onion
  • 1 cup diced carrot
  • 1/2 cup frozen peas
  • 4 tbsp softened unsalted butter
  • 2 garlic cloves grated
  • 2 tbsp soy sauce
  • 1/2 tsp black pepper

Method
 

  1. Mix the softened butter and grated garlic until evenly combined.
  2. Heat 1 tablespoon oil on a wide griddle over high heat, scramble the eggs until just set, and move them to a plate.
  3. Add the remaining oil, onion and carrot and cook for 4 minutes until the vegetables begin to brown.
  4. Add the cold rice and peas, press out all clumps, and fry for 4 to 5 minutes until the grains look separate and hot.
  5. Fold in the eggs, garlic butter, soy sauce and pepper and toss for 1 minute until evenly coated.
