Bean Burrito with Red Sauce

The bean burrito is simple enough that the texture has nowhere to hide. Thin refried beans with a little water until they spread smoothly, then use finely diced onion and a restrained red sauce. Roll tightly while the tortilla is warm.

Ingredients
  

  • 2 cans refried beans 16 oz each
  • 1/2 cup water
  • 1 tsp ground cumin
  • 6 large flour tortillas
  • 3/4 cup mild red taco sauce
  • 1 cup shredded cheddar cheese
  • 1/2 cup finely diced white onion

Method
 

  1. Combine the refried beans, water and cumin in a saucepan over medium-low heat.
  2. Stir for 6 to 8 minutes until smooth and heated to 165°F.
  3. Warm the tortillas for 20 seconds until flexible.
  4. Spread 1/2 cup beans down the center of each tortilla.
  5. Add 2 tablespoons red sauce, cheddar and diced onion.
  6. Fold in the sides and roll tightly with the seam underneath.
