Baked Garlic Parmesan Wings

High heat and baking powder create a dry browned wing before garlic butter and Parmesan enter the picture. Fine cheese clings to crisp skin and avoids stringy melted patches. Turn the wings once and keep the pan uncrowded; touching pieces steam each other where they meet.

Ingredients
  

  • 3 lb split chicken wings
  • 1 tbsp aluminum-free baking powder
  • 2 tsp kosher salt
  • 1/2 tsp black pepper
  • 5 tbsp unsalted butter
  • 4 garlic cloves minced
  • 1 cup finely grated Parmesan

Method
 

  1. Heat the oven to 450°F and set a wire rack over a foil-lined rimmed pan.
  2. Pat the wings dry and toss with baking powder, salt and pepper, then arrange them without touching.
  3. Bake for 25 minutes, turn and bake 20 to 25 minutes more until browned and at least 165°F inside.
  4. Melt the butter, cook the garlic in it for 1 minute and remove from the heat.
  5. Toss the wings with garlic butter and Parmesan and serve promptly.
