Baked Buffalo Wings

Baking powder changes the skin's surface so a hot oven can brown wings without oil immersion. A wire rack lets rendered fat drip away and exposes every side to dry heat. Buffalo sauce goes on afterward, preserving more of the crackle than wings baked while wet.

Ingredients
  

  • 3 lb split chicken wings
  • 1 tbsp aluminum-free baking powder
  • 2 tsp kosher salt
  • 1/2 tsp black pepper
  • 3/4 cup cayenne pepper hot sauce
  • 6 tbsp unsalted butter melted

Method
 

  1. Heat the oven to 450°F and set a wire rack over a foil-lined rimmed pan.
  2. Pat the wings very dry and toss with baking powder, salt and pepper.
  3. Arrange in one layer and bake for 25 minutes, turn and bake 20 to 25 minutes more until crisp and at least 165°F inside.
  4. Whisk the hot sauce with melted butter.
  5. Toss the hot baked wings with just enough sauce to coat and serve immediately.
