Baja-Style Creamy Taco Sauce

Baja sauce is cooler and tangier than the quesadilla sauce. Red bell pepper gives it a peach color and fresh sweetness without food dye. Blend until completely smooth, then let the sauce rest before judging the heat.

Ingredients
  

  • 3/4 cup mayonnaise
  • 1/2 cup sour cream
  • 1/3 cup finely diced red bell pepper
  • 2 tbsp pickled jalapeño slices
  • 1 tbsp fresh lime juice
  • 1 tsp ground cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp kosher salt

Method
 

  1. Add the mayonnaise, sour cream, red bell pepper and pickled jalapeño to a blender.
  2. Add the lime juice, cumin, garlic powder and salt.
  3. Blend for 45 seconds until completely smooth and pale peach.
  4. Scrape the blender and blend for 15 seconds more.
  5. Cover and refrigerate for at least 2 hours.
  6. Use within 7 days and keep below 40°F.
