Bacon Jalapeño Patty Melt

Crisp bacon and pickled jalapeños turn the patty melt sharper and smokier without changing its flat-top structure. American cheese melts around the uneven fillings and cheddar adds flavor. Drain the peppers and keep the bacon in short pieces so neither ingredient slides out whole on the first bite.

Ingredients
  

  • 6 strips bacon
  • 12 oz 80% lean ground beef
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 4 slices Texas toast
  • 2 slices American cheese
  • 2 slices sharp cheddar
  • 1/3 cup drained pickled jalapeño slices
  • 1 tbsp unsalted butter

Method
 

  1. Cook the bacon in a cast-iron skillet until crisp, drain it and cut each strip in half.
  2. Shape the beef into two broad thin patties, season with salt and pepper and cook in 1 tablespoon bacon fat for 2 to 3 minutes per side to 160°F.
  3. Layer American cheese, patty, bacon, drained jalapeños and cheddar between Texas-toast slices.
  4. Spread butter over the outside faces.
  5. Griddle over medium-low heat for 3 to 4 minutes per side until deeply golden and melted.
