Bacon, Egg and Cheddar English Muffin

This is the drive-thru benchmark, fixed at home with crisp bacon and a real egg. Cook the egg in a ring so it stays inside the muffin instead of hanging over every edge. Sharp cheddar gives you more flavor with one slice, not a rubbery cheese stack.

Ingredients
  

  • 8 slices thick-cut bacon
  • 4 large eggs
  • 1/2 tsp kosher salt
  • 1/4 tsp ground black pepper
  • 1 tsp unsalted butter
  • 4 slices sharp cheddar cheese
  • 4 English muffins split

Method
 

  1. Cook the bacon in a large skillet over medium heat for 8 to 10 minutes until crisp, then drain it on a rack.
  2. Toast the English muffins until their cut sides are golden and dry at the edges.
  3. Wipe the skillet, melt the butter over medium-low heat and set four greased 3 1/2-inch egg rings in the pan.
  4. Crack one egg into each ring, break the yolks, season with salt and black pepper, and cover for 3 to 4 minutes until the centers reach 160°F.
  5. Place one cheddar slice over each egg for the final 30 seconds.
  6. Build each muffin with one egg and two bacon slices, then close and rest for 1 minute before serving.
