Auntie Anne's-Style Soft Pretzel Bites

A short baking-soda bath sets the chewy skin before these hit the oven. Work in small batches so the bites do not stick together in the water. Drain them well. Add coarse salt while they are damp, where it actually stays put.

Ingredients
  

  • 1 1/2 cups warm water
  • 2 1/4 tsp active dry yeast
  • 1 tbsp brown sugar
  • 4 cups all-purpose flour
  • 1 1/2 tsp kosher salt
  • 1/4 cup baking soda
  • 8 cups water
  • 1 large egg
  • 1 tbsp water
  • 2 tsp coarse salt
  • 3 tbsp melted unsalted butter

Method
 

  1. Mix the warm water, yeast and brown sugar and wait 6 minutes until foamy.
  2. Knead in the flour and kosher salt for 7 minutes until smooth, then cover and rise for 45 minutes.
  3. Divide the dough into 6 ropes and cut each rope into 8 bite-size pieces.
  4. Simmer the baking soda in the 8 cups water and boil the bites in batches for 20 seconds, then drain them on a lined sheet pan.
  5. Brush with the egg beaten with 1 tablespoon water, add coarse salt, bake at 425°F for 11 to 14 minutes until brown, and brush with melted butter.
