Arby's-Style Roast Beef and Cheddar Sandwich

Thin beef warms in broth instead of frying on a dry skillet, so it stays supple. The cheddar sauce should flow in a ribbon. It tightens slightly as it cools. Toast only the cut faces of the bun to keep the outside soft.

Ingredients
  

  • 1 lb thinly sliced cooked roast beef
  • 2 cups low-sodium beef broth
  • 4 onion sandwich rolls
  • 1 tbsp unsalted butter
  • 6 oz sharp cheddar freshly shredded
  • 1/2 cup evaporated milk
  • 1 tsp cornstarch
  • 1/4 cup ketchup
  • 1 tbsp apple cider vinegar

Method
 

  1. Bring the broth to a bare simmer in a wide skillet and lower the roast beef into it for 2 minutes until hot but not curled.
  2. Melt the butter in a saucepan, whisk in the evaporated milk and cornstarch, and simmer for 1 minute.
  3. Remove the saucepan from the heat and stir in the cheddar by handfuls until the sauce flows smoothly.
  4. Mix the ketchup and vinegar in a small bowl and spread a thin layer on the toasted cut faces of the rolls.
  5. Drain the warm beef well, pile it onto the 4 rolls, spoon cheese sauce over it and close the sandwiches.
