Applebee's-Style French Onion Soup

French onion soup earns its flavor before the broth enters the pot. Cook onions low and slow until deep brown, then deglaze every sticky bit. A thick crouton and broiled provolone give each bowl the chain-restaurant finish.

Ingredients
  

  • 4 large yellow onions thinly sliced
  • 3 tbsp unsalted butter
  • 1 tbsp olive oil
  • 1 tsp kosher salt
  • 1 tsp granulated sugar
  • 1/2 cup dry sherry
  • 6 cups low-sodium beef broth
  • 1 tsp Worcestershire sauce
  • 1/2 tsp dried thyme
  • 6 thick baguette slices
  • 6 slices provolone cheese

Method
 

  1. Melt the butter with olive oil in a Dutch oven and add the onions, salt and sugar.
  2. Cook over medium-low heat for 45 to 55 minutes, stirring often, until the onions are deep brown and jammy.
  3. Add the sherry and scrape the pot for 2 minutes until nearly dry.
  4. Add the broth, Worcestershire and thyme and simmer for 20 minutes, then heat to 165°F.
  5. Toast the baguette slices until dry and set one over each oven-safe bowl of soup.
  6. Top with provolone and broil for 2 to 3 minutes until browned and bubbling.
