Applebee's-Style Bourbon Chicken and Shrimp

A hot cast-iron skillet gives the chicken and shrimp browned edges before the garlic-butter sauce goes in. Cook the proteins separately because their clocks are not close, and reduce the pan sauce until it coats them lightly instead of filling the plate.

Ingredients
  

  • 1 lb boneless skinless chicken thighs cut into strips
  • 12 oz peeled large shrimp
  • 1 tsp Cajun seasoning
  • 1 tbsp neutral oil
  • 3 tbsp unsalted butter
  • 3 garlic cloves minced
  • 1/2 cup low-sodium chicken broth
  • 1 tbsp Worcestershire sauce
  • 1 tbsp brown sugar

Method
 

  1. Season the chicken and shrimp separately with the Cajun seasoning.
  2. Heat the oil in a cast-iron skillet over medium-high heat and cook the chicken for 7 to 9 minutes until browned and 165°F, then move it to a plate.
  3. Cook the shrimp in the same skillet for 1 to 2 minutes per side until opaque and 145°F, then move them beside the chicken.
  4. Lower the heat, melt the butter, and cook the garlic for 30 seconds before adding the broth, Worcestershire and brown sugar.
  5. Simmer the sauce for 3 minutes until slightly reduced, then return the chicken and shrimp and turn them in the glaze for 1 minute.
