Apple Walnut Crisp

Fresh baking apples and toasted walnuts give this crisp a firm bite beneath its oat blanket. The fruit is sliced thin enough to soften before the nuts darken. Cover the pan loosely near the end only if the topping is brown before the juices bubble in the middle.

Ingredients
  

  • 8 cups peeled 1/4-inch fresh apple slices
  • 2/3 cup packed light brown sugar
  • 2 tbsp all-purpose flour
  • 1 tbsp lemon juice
  • 1 tsp ground cinnamon
  • 1/4 tsp kosher salt
  • 1 cup old-fashioned rolled oats
  • 3/4 cup all-purpose flour
  • 2/3 cup packed light brown sugar
  • 3/4 cup chopped walnuts
  • 1/2 tsp kosher salt
  • 8 tbsp unsalted butter melted

Method
 

  1. Heat the oven to 375°F and butter a 9-by-13-inch baking dish.
  2. Toss the apples with the first brown sugar, 2 tablespoons flour, lemon juice, cinnamon and 1/4 teaspoon salt.
  3. Spread the apples evenly in the dish.
  4. Combine the oats, remaining flour, remaining brown sugar, walnuts and 1/2 teaspoon salt, then stir in the melted butter.
  5. Crumble the topping over the apples in an even loose layer.
  6. Bake for 45 to 50 minutes until the apples are tender, the center bubbles and the nuts are toasted; rest 20 minutes.
