Season the pork with the salt and place it in a 6-quart crockpot.
Add the onion, garlic, ancho powder, paprika, tomatoes, pinto beans, cider and broth and stir around the pork.
Cover and cook on low for 7 hours until the pork reaches at least 145°F and separates under a fork.
Shred the pork into chunky bite-size pieces, stir in the apple, and cook covered on high for 45 minutes until the apple is tender but not collapsed.
Stir in the vinegar and rest the chili uncovered for 15 minutes before serving.
