Apple Cheddar Grilled Cheese

Tart apple gives sharp cheddar crunch and acidity without the water load of tomato. Slice it paper-thin so it warms while staying crisp, and keep it in one flat layer. Dijon goes against the bread in a narrow swipe, making the sandwich savory rather than dessert-like.

Ingredients
  

  • 1 small tart apple
  • 4 slices seeded whole-grain bread
  • 2 tbsp Dijon mustard
  • 6 slices sharp cheddar
  • 2 tbsp unsalted butter

Method
 

  1. Core the apple and slice it paper-thin.
  2. Spread Dijon lightly over the inner face of each bread slice.
  3. Layer cheddar, one flat apple layer and more cheddar between the bread.
  4. Butter the outside faces and griddle over medium-low heat for 3 to 4 minutes per side until golden and melted.
  5. Rest 1 minute before cutting.
