Method
- Put the cold cabbage, apples and onion in a 6-quart slow cooker.
- Season the pork with salt and pepper and set it on top.
- Whisk cider, Dijon, vinegar and thyme and pour around the pork.
- Cover and cook on low for 4 1/2 to 5 hours without lifting the lid, until the pork reaches 145°F and cabbage is tender.
- At dinner, rest the pork for 5 minutes, slice it and serve with the apples, cabbage and juices.
