Amy's-Inspired White Cheddar Mac

A clean white-cheddar sauce with a touch of cream cheese distinguishes this Amy's-inspired frozen bowl. There is no orange cheese or crumb top, and white pepper keeps the sauce visually pale. Small elbows are cooked tender so the reheated-style texture remains soft rather than springy.

Ingredients
  

  • 12 oz small elbow macaroni
  • 3 tbsp unsalted butter
  • 3 tbsp all-purpose flour
  • 2 1/2 cups whole milk
  • 4 oz cream cheese cubed
  • 12 oz sharp white cheddar shredded
  • 1 tsp kosher salt
  • 1/4 tsp white pepper

Method
 

  1. Boil the macaroni until tender, reserve 1 cup pasta water and drain.
  2. Melt butter over medium-low heat, whisk in flour for 1 minute and gradually add milk.
  3. Simmer for 3 minutes, remove from heat and melt in cream cheese.
  4. Add white cheddar a handful at a time and season with salt and white pepper.
  5. Fold in macaroni and loosen with pasta water until smooth and creamy.
