All-Purpose Steakhouse Seasoning

A useful steak blend needs salt, pepper and savoriness without hiding the beef under powdered smoke. This one builds a dark crust on steaks, burgers and chops. Make it once, keep it dry, and measure it onto meat instead of shaking until the surface turns orange.

Ingredients
  

  • 2 tbsp kosher salt
  • 1 tbsp coarse black pepper
  • 2 tsp smoked paprika
  • 1 1/2 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp ground coriander
  • 1/4 tsp cayenne pepper

Method
 

  1. Break up any clumps in the salt, paprika, garlic powder and onion powder with the back of a spoon.
  2. Combine all the ingredients in a small bowl and whisk until the colors are evenly distributed.
  3. Transfer the blend to a clean, completely dry jar with a tight lid.
  4. Label the jar with the date and store it in a cool cupboard for up to 3 months.
  5. Use 1 1/2 teaspoons seasoning per pound of meat, applying it evenly to dry surfaces immediately before cooking.
