Pat the cut sweet potato fries dry with a clean towel. Toss first with cornstarch until only a thin dusting remains, then with oil and smoked paprika.
Preheat a 6-quart air fryer to 380°F for 3 minutes. Spread half the fries in a loose single layer, leaving room for air between most sticks.
Air fry for 8 minutes, shake gently and cook for 6 to 9 minutes more until tender inside and browned at the edges. Remove any very narrow fries early if they darken faster.
Transfer to a plate in a loose layer and season with half the salt. Repeat with remaining fries and salt.
Serve in 4 side portions immediately, refreshing the first batch for 1 minute in the empty hot basket if needed.
