Air Fryer Lemon Pepper Chicken

Fresh lemon zest and coarse pepper season the chicken without the excessive salt of many bottled blends. Juice goes on after cooking, where it stays bright and does not interfere with browning. The breasts are even, lightly oiled and checked individually at the end.

Ingredients
  

  • 4 boneless skinless chicken breasts 6 ounces each
  • 1 tablespoon olive oil
  • 1 tablespoon lemon zest
  • 1 teaspoon kosher salt
  • 1 teaspoon coarse black pepper
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 2 tablespoons fresh lemon juice

Method
 

  1. Pound chicken to an even 1/2-inch thickness. Rub with oil, zest, salt, pepper, garlic and onion powder.
  2. Heat the air fryer to 390°F and arrange chicken in one layer.
  3. Cook 6 minutes, turn and cook 5 to 8 minutes more, removing each piece when it reaches 165°F.
  4. Rest 5 minutes, drizzle with lemon juice and serve.
