Place cut fries in a bowl with soaking water for 30 minutes. Drain, rinse briefly and dry thoroughly between clean towels, then toss with oil.
Preheat a 6-quart air fryer to 375°F for 3 minutes. Arrange half the fries in a loose layer with only slight overlap and air fry for 10 minutes.
Shake the basket to separate the fries and cook for 6 to 8 minutes more until the centers are tender. Raise the temperature to 400°F and cook for 2 to 4 minutes until crisp and golden.
Transfer to a plate in a loose layer and toss with half the salt. Repeat the full cooking sequence with the remaining fries and season with remaining salt.
Serve each batch promptly, or return the first batch to the empty basket at 400°F for 1 to 2 minutes to refresh before serving all 4 portions.
