Air-Fryer Buffalo Wings

The air fryer handles a smaller batch quickly, with no pot of oil and less waiting for a full oven. Wings must sit in one uncrowded layer, so cook in rounds rather than piling the basket. Sauce each batch only after every wing is crisp and safely cooked.

Ingredients
  

  • 2 lb split chicken wings
  • 2 tsp neutral oil
  • 1 tsp kosher salt
  • 1 tsp aluminum-free baking powder
  • 1/2 cup cayenne pepper hot sauce
  • 4 tbsp unsalted butter melted

Method
 

  1. Preheat the air fryer to 400°F for 3 minutes.
  2. Pat the wings dry and toss with oil, salt and baking powder.
  3. Arrange in one uncrowded layer and air-fry for 20 to 24 minutes, turning every 8 minutes, until crisp and at least 165°F inside; work in batches if needed.
  4. Whisk the hot sauce and melted butter.
  5. Toss the cooked wings with a thin coat of sauce and serve.
