Soft-Boiled Turkish Eggs With Spiced Brown Butter

Soft-boiled eggs served over seasoned Greek yogurt and topped with a spiced brown butter sauce.
Servings: 1 portion

Ingredients

Method

  1. Add Greek yogurt, garlic powder, salt, and lime juice to a bowl. Let rest for about 15 minutes to come to room temperature.
  2. Boil the eggs for 6 1/2 to 7 minutes for runny yolks.
  3. Melt the butter on very low heat until it foams. After about two minutes, look for golden sparkles and a nutty smell.
  4. Switch off the heat or turn it very low. Stir in sweet paprika, smoked paprika, cumin (if using), and chili oil or Aleppo pepper flakes. Mix and let foam for a few seconds.
  5. Assemble by placing the eggs over the yogurt and pouring the spiced brown butter on top. Garnish with fried or fresh garlic if desired, and serve with bread.

Notes

If you love a strong garlic flavor, fresh garlic can also be added directly to the yogurt.

Preparing the Yogurt Base

Start with Greek yogurt, about 150 grams per portion. Add garlic powder, pinch of salt and a squeeze of lime.

Let it rest for 15 minutes to come to room temperature. So traditionally the eggs are poached, but I was in a rush so I boiled mine for 6 and a half to 7 minutes.

Spiced Brown Butter

Now stir until it foams. After a minute or two, look for these little golden sparkles. Once you see them, turn the heat right down.

Golden foamy brown butter is being stirred with a spoon in a dark pan on the stove.

Add sweet paprika and smoked paprika. The original recipe uses Aleppo pepper. I didn’t have any, so I’m using chili in oil.

Let it foam for a few seconds.

A bowl of yogurt with soft-boiled egg halves has spiced brown butter being spooned over the top.

Assembling the Dish

Add yogurt and eggs, then pour over that delicious spiced brown butter. I top mine with fried garlic. That’s optional, or you can add the garlic straight to the pan.

The finished bowl of Turkish eggs with brown butter and garnish is held outdoors next to a piece of bread, ready to eat.

And don’t forget the bread to scoop up every last bit. Enjoy this amazing, delicious high-protein breakfast.
