I have come across many adaptations of this dish over the years, some memorable and others not so much. This is one of the rare exceptions to actually be worth seeking out.

The most important thing to remember is not to think too much. Many establishments over engineer reformulations of proven classics. Here, recipe simplicity combined with respect to great produce and solid technique triumphs over gimmicky layers every time.
The consistency stood out to me the most while watching this episode. When Guy asked about their process, there was absolutely no hedging. They are fully aware of what they are doing, and more importantly, why they are doing it.
