One-Pan Roast Chicken Lets the Oven Do the Real Work

Let the Oven Do the Work

This is one of my favorite dinners to make because it looks like I spent all afternoon on it, when really, the oven does most of the work.

When you’ve got kids going in different directions with sports, practices, school, and everything else, I love a dinner that doesn’t need me standing over the stove the entire time. Once this goes into the oven, I can pretty much walk away and get on with everything else that needs to happen around here.

Prepping the Chicken and Vegetables

I start with a whole fresh chicken and season it with salt, pepper, and garlic powder. Then I surround it with carrots that are peeled and chopped and potatoes. I like to use the white potatoes because the skins are very thin and you don’t need to peel them. Just chop them up and add them to the chicken.

A One Pan Meal

The best part is that the potatoes and carrots cook right alongside the chicken and soak up all of those delicious juices while everything roasts. By the time it’s done, the chicken is golden, the vegetables are tender, and dinner is ready all in one pan. Nothing fancy, just a really good family dinner. You won’t regret it.
